After using Safari 3 beta since its release I do notice a few changes, for good and for bad.
First, some Dashboard widgets I use do not work (!). I have no clue why.
Second, I do like the new search visualization:


They did change the select boxes:

Third, webkit does show some inconsistencies in CSS interpretation. text-decoration: none; does not work properly..
As I said before, the render engine is faster though.
Fourth, docs.google.com now works in Safari.
By the way, rounded borders (CSS) may come in handy some day.
I do get the impression that Apple released the windows public beta of Safari to early, meaning with quite a couple of big issues such as false rendering and problems with non-english systems.
